Chocolate Creamy Marshmallow Pie Cookies (Whoopies)



Ingredients:

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup melted butter
  • 3/4 cup milk
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Filling Ingredients:

  • 3 tablespoons of butter
  • 1/2 cup confectioners’ sugar
  • 3/4 cup of marshmallow
  • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350ºF.
  2. Sift flour, sugar, cocoa, baking soda, and salt a large bowl.
  3. Add in melted butter, milk, egg, and vanilla. Stir until well mixed and smooth.
  4. Evenly space 12 cookies per a nonstick baking sheet. You should be able to make 2 cookie sheets.
  5. Bake for 13 to 15 minutes.
  6. Place on cooling rack.
  1. Make filling now while cookies are cooling. In a large bowl, beat the butter with a electrical mixer until smooth.
  2. Under low speed, add in the confectioners’ sugar.
  3. In another bowl, melt in the marshmallow.
  4. Add the marshmallow to the rest of the butter-sugar mixture and beat.
  5. Add in the vanilla and continue beating until smooth and creamy.
  6. Spread filling onto cookies.

Prepare about 12 chocolate cream pie cookies.
