Molten Lava Biscuit Cake



Ingredients:

  • 4 ounces (or 1/2 cup) of dark chocolate (I used 70% Cacao Dark Chocolate)
  • 1/2 cup unsalted butter
  • 1 cup icing sugar
  • 2 whole eggs
  • 2 egg yolks
  • 1/3 cup flour
  • 1 teaspoon icing sugar
  • Vanilla ice cream or any ice cream flavour of your choice

Directions:

  1. Preheat oven to 425ºF.
  2. Melt the dark chocolate and butter together. Click here to see how to melt the chocolate.
  3. In a large bowl, add 1 cup of icing sugar and chocolate mixture together. Mix well.
  4. Blend in whole eggs and egg yolks and beat.
  5. Stir in flour.
  6. Grease six cups of a 12-cup muffin pan. Pour mixture into the 6 cups.
  7. Bake for 8-9 minutes or until sides are firm but centres are still soft.
  8. Let it cool for 1 minute.
  9. Invert cakes onto dessert plates.
  10. Sprinkle the 1 tsp icing sugar on top of each cup. Serve each cup with ice cream on the side.

Tip: You can refrigerate the batter and bake it when you’re ready to serve.

Prepare about 6 molten lava biscuit cake.
