Strawberry Pinwheels

  • 1 1/3 cups flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/3 cup butter (room temperature)
  • 1/2 cup sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup strawberry jam


  1. Sift flour, baking powder, and salt in a bowl.
  2. In a large bowl, beat butter and sugar with an electric mixer until light and fluffy.
  3. Beat in egg and vanilla extract.
  4. Beat in flour mixture.
  5. Wrap it in aluminium foil and refrigerate for at least one hour.
  6. Preheat oven to 375ºF.
  7. On a floured surface, roll dough into a thin sheet. Cut 1-1/2 inch squares. Each square cut 1/2 inch from each corner toward center. Place on non stick cookie sheets.
  8. Put 1/2 teaspoon of jam on the center of each square.
  9. Fold each other tip to the center. Repeat for the other squares.
  10. Bake for 9-12 minutes or until edges are lightly browned.

Prepare about 24 strawberry pinwheels
