Ingredients:
- 2-3/4 cups all-purpose flour
- 4 tsp. baking powder
- 1-1/4 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/2 tsp ground nutmeg
- 2 cups sweet potatoes (peeled, cooked, mashed)**
- 3/4 cup sugar
- 1/2 cup butter/margarine, melted
- 1 tsp. vanilla extract
- 3/4 cup chopped nuts (i.e., pecans) – optional
Directions:
- Preheat oven to 450 degrees; lightly grease a baking sheet.
- Combine dry ingredients in a large mixing bowl: flour, baking powder, salt, cinnamon, nutmeg.
- In another bowl, combine sweet potatoes, sugar, butter and vanilla. Add to flour mixture and mix well. Add nuts, if desired.
- Turn onto a lightly floured surface; knead slightly. Roll dough to 1/2-in. thickness.
- Cut with a biscuit cutter (2-1/2 in. circles) and place on lightly greased baking sheets.
- Bake at 450 degrees F for 12 minutes or until golden brown.
Serves: 1-1/2 to 2 dozen.
**Works with baked or boiled sweet potatoes. If using boiled, the dough will be more moist, and you may have to add more flour.
